A thing that disappointed me in the Halls was that at the inn there is only stew!
It would be nice to add some underground food like rats on stick, rat pie, snails, worms, mushrooms, etc.

Those are not necessarily foods that dwarves enjoy.
From the lore, dwarves trade for a lot of surface foods and particularly grain for the beers that they craft below. If you'll notice, there are vats of mead brewing in the Halls. Mead is made from honey and bees cannot live underground.
There are certain types of mushrooms that the dwarves gather from the Underdark, and of course the deep rothe which everyone (and everything) enjoys as a prey animal.
Meat is the primary food source for dwarves with their grain and mushrooms going into the beers and fine ales. Also, stews are the best way to feed large groups of hungry people. I can see a pot of stew brewing down there in the depths of the Hall for 200 years, with more ingredients being added to it as they come in. "I ate from this stewpot, and your grandfather ate from this stewpot, and his grandfather ate from this stewpot. Now eat your stew!"
