Would it be possible for priests to sell Restoration? I mean I really wouldn't really know but its makes sense that a priest would be able to counter any effect an undead would make.

The prayer Restoration is one which is available to PC clerics.
I'm assuming from the wording of your post that you think it should also be offered by NPC priests.
As a roleplay Mud, I would rather see it remain as it is and any affected characters seeking a PC priest for that kind of aid.
Of course, the perfect solution would be for players to take priests along with them when they adventure

A guilded cleric has Restoration in the repertoire of spells he can learn, and as long as you find the trainer, you can train it. Once trained, you can sell it, give it, or trade it to a patient to restore their levels, whichever you choose to do.
Unguilded priests do not have it, that is a limitation of the game, where it pretty much requires a cleric to devote to some deity to get their full potential of spells.
