Now that tradeskills are the new wave, might be considering making sort of an opening of the skill slice to all the classes?
Let me ellaborate it further;
Slice would continue being an exclusive skill to some classes/churches, but now everyone could use it, even if they haven't as skill (something akin to haggle), of course, the chance of success would be the higher you have the skill (if you have it), if not, well, hopefully you will have high whatever attributes are used for that skill.
Also it might be worth considering adding trade focus: slice, which would grant a bonus to slice and perhaps more chances to skin a corpse before ruining it or even that skill as class skill.

Nice idea, one addition also to slice skill would be that you have one or more skin depending on the size of the creature. Normally, with an optimal skinned creature, you can make one leather armor for a character one size smaller than the creature. So skinning a Large creature shoudl give enough to make a medium piece of leather armor. (Considering all the skinning is succesfull of course).
