I have noticed that the component of the different resist spells (fire, electricity, ...) is a holy symbol.
If i understand that for a priest, the thing is it's also a mage spell, and i wondered if there was any reason for that spell could be limited to faithed mages.

The term 'holy symbol' is a catch all term for its use as a spell component.
Making it such that only an actual symbol of faith could be used would prevent any unfaithed priest, wizard, bard or ranger from accessing those prayers and spells which have 'holy symbol' set as the component.
Even applying it to just those resistance spells (although why you might be that selective I can't quite fathom right now) would in my opinion unfairly penalise unfaithed characters
This is because Holy Symbol means different things for different classes
for priests, it will normally be the generic symbol of faith issued at creation
for wizards, it will be the spellbook issued at creation or any replacement bought later
for other casters there are items which take the place of the above in fulfilling the role of 'holy symbol' as component.
